Kale Chips on the Reals

This Recipe has been tweaked to perfection. I give you Kale Ritos! Possibly my favorite Raw snack, I am rarely without these at my house.

You will need:

2 - 3 Heads of Kale Destemmed and broken into chip sized pieces.

Cashew Cheese:

1 3/4 Cups Cashews, Soaked in water overnight.

1/4 Cup Sun Dried Tomatoes, Soaked in water overnight

1 -2 Cloves Minced Garlic

1/4  Yellow Onion

1/4 -1/3 cup Nutritional Yeast

1 1/2 Tablespoon Paprika

1 1/2 Tablespoon Chili Powder

1 Tablespoon Sea Salt

1 tsp Chipotle Powder (Optional)

Squeeze of Sriracha or Dash Cayenne if you want a little heat!

If you don't have a dehydrator, No worries! Pop em in the oven on low. 

Method:

Take Kale pieces into large Mixing bowl. Rinse, Drain, and set aside

Add all of your 'Cheese' Ingredients into a Blender or Food Processor. Add enough water to cover about 3/4 of the ingredients. Blend or Process all of the Cashew Cheese ingredients together until smooth and uniform. Add water as needed but consistency should be thick enough to coat leaves.

Slowly add cheese into kale bowl and get your hand all up in it. try to evenly distribute all that cheesy goodness to the leaves. 

Now, either in a dehydrator or oven, line 2 trays or sheets with parchment paper and evenly spread Kale onto sheets. Place in dehydrator at 115 for 7-9 hours (overnight is easiest), or into oven for much less time haha! Usually they'll be done in about an hour or so in the oven. Just keep your eye on them until they are thoroughly crisp. 

Let them cool, Store in an airtight container and enjoy!
