Raw Pizza Bites

Raw pizza. I know. It sounds weird. We're left with mental images of uncooked dough and cheese. This, however, is not that. This is a dropkick of tasty and healthy at the same time. With the Tomato Flax crust, cashew cheese, and toppings of your choice, you won't be disappointed. Here we go.

INGREDIENTS

For Crust: 

1 1/3 cup chopped tomatoes

2/3 cup chopped zucchini

1 cup flax meal

1/2 cup almond meal 

Wedge of yellow Onion

1 Chopped garlic clove

1 1/2 tbsp Italian Seasoning

3/4 tsp of sea salt

For Cheese: 

1 cup soaked cashews

1/4 cup soaked sun dried tomatoes

2 1/2 tbsp Nutritional Yeast

Wedge of Yellow onion

Squeeze of Lemon

Dash Paprika

Dash Garlic Powder

Dash Onion Powder

Sea Salt to taste (I use about 1/2 - 1 tsp)

For Toppings:

Anything you want! In the one above I have Arugula, Zucchini shreds, Beet shreds, and Grape tomatoes but you can get creative. Common toppers are: Greens, Carrot, Onion, Sprouts, Tomatoes, Basil, Zucchini, Raw Marinated Mushrooms, etc. Have fun with it! 

METHOD:

 Crust:

For crust to be raw you will need a dehydrator. If that's not a thing, we can use an oven and make it semi not quite raw. 

If working with whole almonds and whole flax, process them into a meal before combining ingredients.

Combine ingredients in food processor, process, and let sit a couple of minutes to let the flax do its thing.

In the meantime, take a dehydrator tray or a cookie sheet (depending on what you're working with) and line with parchment paper or dehydrator liner. 

Once that's set, spread mixture thinly and evenly over sheet. should be about 1/8 - 1/4 of an inch in depth. If you're oven-ing, pop in at lowest temp and after about 30 minutes take a look. You want the sheet to be pliable but semi dried out. If you're dehydrating, this will happen after 5 hours at 110 degrees. Once we're there, Flip on tray and cut into squares. Finish in the oven for another 10-15 minutes or until completely dried out. Or! Finish in dehydrator for another 5/6 hours (It's a labor of love).

Cheese:

Soak Cashew and Sun dried tomatoes for 6-8 hours or overnight in water. Then, Take all of your ingredients and blend or process. That's it. No, really. 

Toppings:

Pre cut, shred or spiralize your toppings and get them ready!

So once it's all done. Just smear some cashew cheese on the pizza cracker, top with veggies and enjoy! Whooop!! <3
